Beef Tenderloins with Wine Sauce and oven roasted potatoes*

Valentines Day is fast approaching!  Whether you have your Boo, boyfriend, husband or just that special close friend, there is no better way to say 'I LOVE YOU' than Fillet Mignon and Oven Roasted Potatoes!

 



In the mood for a celebration?  Serve these richly sauced tender steaks for dinner.

Total Time: 25 mins
Servings: 4 servings

Ingredients
4 beef tenderloin steaks, cut 1 inch thick (about 1 pound total)
1/2 teaspoon cracked black pepper
1 tablespoon butter or margarine
1/4 cup chopped onion
1/4 cup beef broth
1/4 cup dry red wine
1 teaspoon dried marjoram, crushed
Directions
Trim fat from steaks.  Press pepper onto both sides of each steak.  In a large heavy skillet melt butter over medium-high heat.  Add steaks; reduce heat to medium.  Cook for 10 to 13 minutes for medium-rare (145 degree F) to medium (160degree F) doneness, turning once.  Transfer steaks to a serving platter, reserving drippings in skillet.  Cover steaks; keep warm.
For sauce, stir onion into reserved drippings in skillet.  Cook until onion is tender. Remove from heat.  Carefully add beef broth, wine, and marjoram to onion in skillet, scraping up any browned bits from bottom of skillet.  Bring to boiling; reduce heat.  Boil gently, uncovered, about 2 minutes or until reduced to about 1/4 cup.  Serve sauce over steaks.  Makes 4 servings.
 
Easy Spicy Roasted
A subtle blend of spices, olive oil, and cheese take any meat to the next level of satisfaction. Best served with grilled meats, these potatoes enhance any meal to astronomic levels.
Ingredients
10 medium red potatoes, washed, diced to half inch square with peel
1 medium onion, chopped
1 tablespoon granulated garlic
1 teaspoon basil, crushed (if you prefer, use Italian blend mix, crushed.)
1 tablespoon kosher salt
Freshly ground black pepper to taste
2 teaspoons chili powder
1/4 cup extra virgin olive oil
1 cup shredded Cheddar cheese (optional)
 Directions
 Preheat the oven to 450 degrees F
 Arrange the potatoes and onions in a greased 9x13 inch baking dish, larger if needed so that they are evenly distributed, then season with garlic powder, salt, pepper and chili powder. Drizzle with olive oil. Stir to coat potatoes and onions with oil and spices.
Bake for 35 to 40 minutes in the preheated oven, until potatoes are fork tender and slightly crispy. Stir every 10 minutes. When done, sprinkle with cheese. Wait about 5 minutes for the cheese to melt before serving.
