Monday Munchies: Mini Cake Mix Cookie Sandwiches


My daughter has been wanting to make cake mix cookies for awhile now and it was on our to do list this weekend. We decided to go an extra fun step and turn them into mini cookie sandwiches. I love how they turned out and I think they would make great little desserts for birthday parties, baby and wedding showers, etc. We decided to do ours in purple, pink, blue and green but you could dye them to any color to coordinate with your event. :) I love how they also remind me of faux macaroons. Sorry the pictures are a little dark. We cooked them at night and well you take what you can get with no natural light. I will try to take some pictures during the daytime if I get a chance, before their gone of course. ;)




These cookies are super easy to make.



1 Box White or Yellow Cake Mix
1/4 Cup Vegetable Oil
2 Eggs
(Food Coloring, optional)
Frosting

  •  Mix the box mix, oil and eggs together
  • Separate dough equally if you want to color them. If not skip this step. Use about 10 drops to begin with and add drops depending on how dark you want your color.



  • Wrap in plastic wrap and chill for approximately 30 minutes. If you don't allow the dough to chills it will be a huge mess trying to make balls for the cookies.




  • Preheat oven to 350 degrees and cook for approximately 7 minutes. Keep in mind how your oven cooks cookies and adjust the time accordingly.
  • Cool on a cooling rack for approximately 1 minute.
  • Add a little frosting on one cookie and top with another.

    Speaking of food... Monday Munchies just so happens to fall on the food bloggers against hunger day.




    I'm not strictly a food blogger but I do think fighting hunger here in the United States is very important and this is a great cause to mention. What would you do if you were hungry? No child should go hungry in America, yet 1 in 4 U.S. kids don't know where their next meal will come from. Charity is not enough. The only way for hunger to be eliminated in America is if policies change, so it's important we make our voices heard. The goal of this campaign is to inspire action. Go to No Kid Hungry, take 30 seconds and send a letter to congress asking them to support anti-hunger legislation. The more letters we submit, the better!
