Now that our daughter is in school easy and quick fix dinners are a must. Even if you don't have kids I know there are definitely nights when you don't want to cook a full meal. Heck, there were lots of nights like that for us before we had our daughter. Sure we could run out and grab fast food but even if you don't want to cook a full meal it's still cheaper and better for you in the long run if you stick to cooking meals at home. Some of the easiest and cheapest dinners are one dish casseroles. This hamburger hash brown casserole is one of our favorites.
INGREDIENTS:
2 lbs. hamburger
1 1/2 cups shredded cheddar cheese
1 can cream of chicken soup
1 cup of milk
1/2 cup of country crock spread (melted)
salt & pepper
1 package of hash browns
I have always been a country crock fan and like to use it in place of butter. My mom has always done this and it just stuck. I don't think I ever remember her using real butter for anything. It is funny how you stick to things your parents did. Anyone else raised on using margarine and spreads instead of real butter?
DIRECTIONS:
Brown hamburger meat. Mix cheese, soup, milk, melted country crock spread, salt and pepper together then add in the hash browns. I just used the prepackaged frozen hash browns but you can use whichever kind you prefer. Once you have all of this mixed layer the hamburger in a 9x13 pan and then spread the mixture on top of the burger. Cook at 350 degrees for approximately 1 hour.

Not a burger lover? No problem... The best thing about casseroles is that they pretty much all have a few basic ingredients.

a secondary ingredient
a starch
a binder
and a topping
The main ingredient is usually some type of protein like hamburger, chicken or tuna. There are lots of options for a secondary ingredient, pick your favorite vegetable. The starch is simple enough add potatoes, pasta or rice and a binder such as cream of chicken plus a little extra milk or water so it's not too dry. The last is topping it with something delicious like cheese or crackers. A simple formula to have the quick and easy meals just the way you like. :)
